I&#8217;ve been wanting to make red beans and rice because I know it&#8217;s something Karen likes, but <a rel=\"noreferrer noopener\" href=\"https:\/\/www.allrecipes.com\/recipe\/241499\/chef-johns-red-beans-and-rice\/\" target=\"_blank\">the last recipe I tried<\/a> seemed like a lot of work and the results weren&#8217;t that exciting. I found a recipe for <a rel=\"noreferrer noopener\" href=\"https:\/\/www.allrecipes.com\/recipe\/34419\/easy-red-beans-and-rice\/\" target=\"_blank\">&#8220;Easy Red Beans and Rice&#8221;<\/a> which isn&#8217;t authentic at all (no celery? tomatoes? really?) but did seem like less work. I added seasonings from the Chef John recipe, and here&#8217;s what I came up with. Karen declared it a success. (I&#8217;m not sure it saved me much work over the first recipe, though.)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>16oz kielbasa, cut diagonally into \u00bc inch slices<\/li><li>1 onion, chopped<\/li><li>1 green bell pepper, chopped<\/li><li>1 stalk celery, chopped<\/li><li>1 clove minced garlic<\/li><li>2 (15oz) cans kidney beans, drained and rinsed<\/li><li>1 (16oz) can petite diced tomatoes<\/li><li>1 (4oz) can diced green chilies<\/li><li>2 bay leaves<\/li><li>\u00bd tsp dried oregano<\/li><li>\u00bd tsp dried thyme<\/li><li>\u00bd tsp black pepper<\/li><li>\u00bc tsp cayenne<\/li><li>salt to taste<\/li><li>2 green onions, chopped<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Start cooking 2 cups rice<\/li><li>In a large skillet over low heat, cook sausage until it starts to brown, and the oils coat the bottom of the skillet.<\/li><li>Stir in onion, green pepper, and celery; saute until tender.<\/li><li>Pour in garlic and beans and tomatoes and chilies (with juice). Add seasonings.
